Mulberry Cake | Eggless | Gluten Free

Tis' the season of mulberries.

Fresh handpicked Mulberries have been a craze for us since childhood as it is one of those fruits that we get have straight from the tree in Delhi. Living in a city means less access to organic and fresh fruits and vegetables straight from the farm. And Mulberries for me has had a very special place in heart due to all the fond memories of us having it while we were kids, playing under the same huge tree it is today and waiting for them to ripen, to enjoy the very seasonal and super delicious temperate fruit.

But this year I decided to take a step further and experiment with the Mulberries in different ways. One of them was going out to Naturals Ice Cream and having a Mulberry flavoured waffle cone (IHeartMulberry). But the rest involved me baking and spending time in the kitchen.

I made these Eggless and Gluten Free Mulberry cake this time. They are super simple, doesn't take very long and makes for the perfect tea time snack. But being in season for just a meagre 2 weeks, I'm going to wait for the next one to bake it again. Everyone at home and around loved the cake.

MULBERRY CAKE | EGGLESS | GLUTEN FREE

INGREDIENTS

Whole Wheat Flour
1 cup
Powdered Sugar
½ cup
Mulberries (squished into pulp)
¾ cup
Cinnamon Powder
1 tsp
Salt
pinch
Baking Powder
1 ¼ tsp
Baking Soda
½ tsp
Yogurt (not watery)
1 cup
Vanilla Essence
1 tsp
Cooking Oil
1/2 cup
Whipped Cream (for topping)
1/4cup

METHOD

  1. Mix in together flour, Powdered sugar, salt & cinnamon in a bowl.
  2. In another small bowl, add the baking powder & soda to the yogurt. Let it rise for 1 min.
  3. Now add the yogurt and oil in three parts to the dry ingredients. Fold the mixture and slowly incorporate all of it together.
  4. Add the vanilla essence and mulberries to the batter.
  5. Preheat the oven at 180C. 
  6. Line the baking tin with parchment paper.
  7. Bake for 30-35 min. Do the fork test. Keep for 2-3 more minutes if its not completely cooked.
Mulberry Cake id ready to be had with your evening tea/coffee.
