Eggless Chocolate Cake with Strawberry-Vanilla Ice Cream


What do you call something which makes you drool, and one piece in your mouth gives you the feeling of immense pleasure, like you have achieved your ultimate desire and now you are satisfied with your life !?
Its called A  CHOCOLATE  CAKE!


And suppose you are very lucky and you get to have some ice cream with it especially when winters are finally saying a mellow goodbye outside and you are starting to warm up too (yeah, I know this imagination is leading to a lot of water filled mouths).
Now you may think..what? Ice cream? With a cake? Isn't it supposed to be paired with brownies or maybe mud cake? How come a normal, plain old chocolate sponge cake?
And to that I would say..baby when you are hungry and having a mad sugar rush and you have two options namely chocolate cake and ice cream..you can never decide one! So what you do is mix them up and eat something even more heavenly!
Who needs brownies when we can enjoy it with a simple cake! And sometimes experimenting becomes beneficial. So it was a trial..but did not end with an error.


Now if you follow me on instagram..you would know that I had no plans of this particular combo. I made the cake(and posted-only to make you jealous) and the next day I got this option, and by now you know what happened next. I teamed things up and got this beauty. And I thought now it should be shared with you. So, here I am with another yummy yet easy Chocolate Cake with Ice cream recipe.


Minimal ingredients is what makes it even more better.

And my VEGETARIAN friends, good news THE CAKE IS EGG-LESS. Wooho! Finally after a lot of trials I got this egg-less one right and that too without any substitution. It did not break and rose well too.


Getting onto the method. Its very easy.
Take 1 cup milk in a bowl and add 1 cup sugar. Beat the mixture.
Now add 1 cup flour and 1/2 cup cocoa powder slowly to it. Add 1 tsp baking powder, 1 tsp vanilla essence and 1/2 cup vegetable oil. Beat the batter until a dropping consistency.



Now preheat the oven (i.e convection mode in micro) at 180°C.
Grease the cake tin with 1 tsp oil and sprinkle some flour over it.(It will avoid the situation when your cake doesn't want to come out of the tin.)
Bake for 30-40 min. Do the fork test(u know what that is right!) Well if you don't, then just poke your cake with a fork, if it comes out clean, the cake is done. If it doesn't then you have to bake it some more.

Now if you don't want to wait this long for your cake to bake, you can bake it in the microwave as well. But remember to use appropriate tin for it..like a borosil one.
Grease the tin like I explained above and keep it inside for 5-7 min. It will cook faster so be careful it doesn't get burnt or hardens.

See baking in a microwave setting and in the oven setting will always give you different results. And as far as my experience goes oven cakes are softer and textured while microwave ones are stickier and spongier. Depending upon the time in hand you can go for one.


So now that the cake is done..let it cool! Take it out carefully, cut it into pieces, put some ice cream over it and other garnishing like dry fruits, chocolate sauce, chocolate chips, tutti frutti or anything that you like and experience sheer joy.

The recipe in brief is given below. So next time you have a sweet craving, here is what you should do! ☻

INGREDIENTS

All Purpose Flour(Maida)                       1 cup
Powdered Sugar(White)                         1 ½ cup
Cocoa powder                                            3/4 cup
Baking powder                                          1 tsp
Vegetable oil                                              ½ cup
Milk                                                              ½ cup
Vanilla/Chocolate Essence                    1 tsp

METHOD

  •  In the oven
1) Take the milk in a bowl and add sugar to it.
2) Now add the flour, cocoa powder and baking powder slowly to it and beat.
3) Add the vegetable oil and essence to this batter. Beat until there are no bubbles left.
4) Preheat the oven at 180°C.
5) Grease a cake tin with some oil and sprinkle a little flour over it(to avoid cake sticking)
6) Pour the batter into this tin and keep it in the oven to bake for about 30-40 min.
7) Once done, do the fork test(explained above if you don't know).
    Let it cool. Cut into pieces and serve with your favourite ice cream and garnishing.

  • In the microwave
    Step 1) to 3) are the same as above.
4) Grease a microwave safe bowl with oil and flour.
5) Pour the batter into the bowl and keep it in the microwave for about 5-7 min.(Be careful, don't let it get burnt. Remove it as soon as it gets baked)
6) Let it cool. Cut into pieces and enjoy with ice cream and garnishing.
