Eggless Pineapple Cake with Fresh Fruit Topping
And my birthday cake this year turned out to be this amazing 2 tier pineapple cake with fresh fruit toppings. After putting a lot of thought as to which is the best cake for a family get together, I decided to make something that had an ingredient everyone in my family absolutely loves- fruits. And I got so many praises for the cake and for the first time, an entire 2.5 kg cake got finished in no time. It was such a happy moment for me to see my entire family enjoying what I baked.
I made the base cake an Eggless Pineapple fruit cake, iced it with simple whipped cream and topped it with lots and lots of fruits- kiwis, pineapple, cherries, strawberries, mangoes, grapes. You can use as many and any fruits that you love. The best part about this cake is that its really simple to put together as there is no special designing or technique that you have to learn. All you have to do is stack the fruits- symmetrical or asymmetrical, whatever your creative instincts tell you to do.
I made it huge because there were so many people, but you can make it a small 6 inch cake and just load it with fruits on top. A raw unfinished fruit cake is what summers ask for.
For a 2.5 kg cake, I made two 6in cakes and one 8in cake. Below you can find the recipe for one 6in pineapple cake and you can make as much as you want by adding onto the measurements.

EGGLESS PINEAPPLE CAKE WITH FRESH FRUIT TOPPING
INGREDIENTS
All Purpose Flour
(Maida)

1 cup
|
Powdered Sugar
|
1 cup
|
Baking Powder
|
1 ¼ tbsp
|
Baking Soda
|
½ tsp
|
Yogurt (medium
consistency)
|
1 cup
|
Vanilla/ Chocolate
Essence
|
1 tsp
|
Oil
|
½ cup
|
Pineapple (chopped
and candied)
|
½ cup
|
Whipped cream (for
icing)
|
2 cup
|
Fruits (for
topping)- cherries, strawberries, kiwi, grapes, mango, pineapples
|
As per requirement

METHOD
- Preheat the oven at 180C. Grease a 6in cake pan with oil and butter paper.
- Mix flour, powdered sugar and cocoa powder.
- Take another bowl and mix yogurt, baking powder and baking soda. Let it sit for a minute to rise and form bubbles.
- Add this yogurt and oil in 3 parts to the flour mix and fold well. (Do not overfold as it will lose all the air incorporated in the batter)
- Add vanilla essence to the batter.
- Pour the batter into the greased pan. And bake at 180 for 35 min. (Check after 30 min first and then keep more if undone.)
- Let the cake cool completely before icing.
- Make other batches of cakes similarly. Put whipped cream between every cake and stack then on by one. Crumb coat the cake with whipped cream. Chill for 15 min.
- Meanwhile slice the mangoes, kiwi, strawberries and pineapples.
- Remove the cake from refrigeration and make the final whipped cream coat. Drip chocolate on the topmost layer of cake. (optional)
- Stack the cake with fruits as much as you want. Chill in fridge. Cake is ready to serve.
