Phirni Tarts | Eggless | Whole Wheat

The festive season in India has kick-started with festival of Rakshabandhan. Celebrating the sweet & sour yet very precious bond of love between a brother & sister, infact all siblings, is this festival of Rakhi.

Sweets being an integral part of any Indian celebration, homemade sweets are a delight to have with all fresh ingredients and big tablespoons of love mixed together. And what's better than having your favourite sweet right at home but with a French twist.

I made these super simple Phirni Tarts which are eggless and made with whole wheat flour. A dessert on a healthy-ish note is makes the celebration even more fun. Its a very easy yet really delicious recipe made slightly healthier in my attempts to create better and healthy-ish desserts. Find below the recipe for the PHIRNI TARTS and let me know in the comments your favourite fusion dessert.

PHIRNI TARTS | EGGLESS | WHOLE WHEAT

INGREDIENTS

For Tart Crust

Whole Wheat Flour
1 cup
Powdered Sugar
Alternate- Sugar Free
1/4 cup
Salt
1/8 tsp
Unsalted butter
½ cup
Organic Cow Milk
3-4 tbsp

For the Phirni

Milk
1 Litre
Kesar/Saffron
3-4 strands
Sugar
(Alternate: sugar free)
8 tbsp
(1.5- 2 tbsp)
Chopped Nuts
½ cup
Vanilla/Kewra Essence
1 tsp
Green Cardamom pods
3-4

METHOD

Making the Phirni
  1. Heat milk in a non-stick saucepan and bring to boil.
  2. Lower the flame and add the kesar strands, kewra essence & open cardamom pods.
  3. In a bowl, take some of this hot mil and mix it with the rice flour. Make sure no lumps are formed.
  4. Cook the milk on low flame until it reduces to 3/4th of the initial quantity.
  5. Now add the rice and milk mixture made in step 3 along with sugar/sugar free and chopped nuts.
  6. Cook for another 10 min or till the phirni becomes thick in consistency.
  7. Keep it aside to cool.
Making the Tart Crust
  1. In a bowl, put together whole wheat flour, white butter, salt and sugar.
  2. Kneed to make a soft dough by adding required milk.
  3. Let it stay for half hour, covered by a damp cloth.
  4. Grease the tart tins. Pre heat the oven at 180C.
  5. Now roll out the dough into small circle sheets and place it in the greased tart tin. Remove the excess dough from sides.
  6. Bake for 10-12min at 180C.
Assembling the Phirni Tarts
  1. Fill the tart crust with chilled phirni.
  2. Garnish with chopped nuts or even some whipped malai/cream (I prefer non sweet version to complement the sweetness of the phirni)
  3. Serve fresh to all your guest.
