Rose Sandesh :)

Roses are red,
        violets are blue,
               Sugar is sweet
                      And so are you..


I started with this because my dessert is based totally on this little poem we have been listening to since our childhood. Very anticipated Valentine's week has started today..with the ROSE DAY. Its going to be a week of celebrations to a lot of you there and I wish you all really enjoy it. Some of you may also find it too mushy mushy..but thats just another point of view. Small celebrations are never harmful. And when you are in love you find everything sweet. :)


But what I have today is love for your tummy. Another dessert for you but this time its 'desi'. Who said rose day cant be celebrated with our ethnic flavor. I know chocolates and pastries are the flavor of this week but we can experiment a little. Cant we! Because I sure have done that.

It was a long time pending plan to make this special dessert because its one of my favs and since I made it today I put a little twist to it. And this very tasty Indian dessert is nothing but a SANDESH. All Bengalis out there would know how yumm it is. And those of us who do not get to eat it frequently(because it isn't available at every sweet corner. Even if you get,the taste isn't guaranteed. Huh) will know how delicious this paneer(cottage cheese) sweet is if you have had he chance to taste it once. If you haven't then you have to try it. Paneer fans are going to fall in love I'm sure.



Now technically making Sandesh involves two different processes- making the paneer and then the sweet dish. Now I have skipped the first part because Freshly made paneer is very easily available near my place so I used that. (remember to use only FRESH paneer). Otherwise you can make it at home which is a longer route. It is also made with chenna but we will go the paneer route today. Consider this as a shortcut.

Take 1 cup paneer (Fresh..fresh..fresh) and scrunch it into really tiny pieces. This you can do with your hands or with a masher as well. It will look like this.


Then add 3 tbsp of granulated sugar. (that's how much my folks like. You can increase or decrease it as much as you want.)

And now here comes the special effect. My sandesh is rose flavoured. Add 1/4 tsp of  rose essence and 1/4 tsp of red food colour to get a lovely baby pink shade. Also you can add 1/4 tsp of cardamom powder(green elaichi powder).  Mix well. It will look like this.


Now add 1 tbsp of fresh cream(malai) and knead this batter and you will get a nicely mixed pink shaded dough kind of batter. You are kneading basically to bind the small pieces. Mine isn't smooth because I couldn't knead that well (I have hurt my hand a bit)..but you should do it well.

And we are done. Just make balls out of this or any shape you like.(balls are the easiest and looks cute too) Garnish with almonds or pistachios.



Another thing that you can put in this is dried rose petals. You know rose petals are edible right? And they will add to the flavour of this sweet dish also. I refrigerated it because I like it chilled. ☺

So here we have a very easy to make sandesh recipe with a rose twist. And the best part is that it is very low in calories and high in proteins. So it is a very healthy way to end your meal. Also its fast and easy to make. No cooking no baking.

INGREDIENTS                                                                                    yields: 9 pieces
                                                                                                               time: 20 minutes

Paneer(cottage cheese)                      1 cup
Sugar(powdered)                                3 tbsp(or to your taste)
Fresh Cream(malai)                           1-2 tbsp
Rose essence                                       1/4 tsp
Red food colour                                   1/4 tsp
Cardamom powder(elaichi)              1/4 tsp(optional)
Almonds and pistachios                    for garnishing

METHOD

1) Take the paneer and scrunch them into really small pieces with your hands or a masher.
2) Add the sugar and cardamom powder(elaichi) and mix well.
3) Add the rose essence and the food colour to get a light pink shade.
4) Add the fresh cream and knead the batter to get rid of lumps.
5) Now make balls out of it.
6) Garnish with dry fruits. Serve chilled.

    1. Thanku so much..and yeah it is really easy. Do try once and let me know. And use powdered sugar that will be easier to mix. And knead well (dont forget) ;)
