Fried Idli with Vegetables

My Breakfast Story..

Breakfast has always been an essential..infact the most important part of our meals. And I had this really bad habit of not eating my breakfast on time. (umm..I still do ;p) And you know what my parents tell me..that according to some research people who do not eat breakfast tend to grow obese.
Listen up all my diet conscious foodies..dont skip your breakfast.

So, I thought it would be nice to share my breakfast story with you. Being in a South Indian family you would think I must always have idlis and dosas (that's the few dishes people in North know. Seriously!! ) But to your dismay that's not the case. We make a variety of items from all parts of the world..starting from poori aloo to pancakes.


But this post brings me back to  my roots..with a little twist.
The other day we had idlis for dinner and there were few leftovers for the morning. You cant obviously throw them. And you cant eat them as it is. They sat there in the kitchen alone,,feeling sad
And then I thought of a makeover. FRIED IDLI. Its a common dish in India but I was trying it for the first time.
And it was super easy..tasty..healthy..filling and the best part..was made of leftover food.




Starting with the recipe..
Its pretty simple. Not many ingredients..not much preparations..and no long cooking time.
Take 1 capsicum (big), 1 onion (medium) and 1 tomato (small). Chop all of them.
In a kadai (cooking pot) put 5-6 tsp of cooking oil.
Put 1 tsp sarso seeds (mustard seeds) and let them pop.
Now put the onions and salt, cook them until brown.
Add the capsicum and cook till they become soft. Now add the tomato, 1/2 tsp red chilli powder and 1/4 tsp turmeric (haldi). Cook for another 2 minutes.
Put 1 tsp of tomato ketchup.
Lastly add the idlis cut into square pieces and fry them in the veggies for 2 min. You can add 2-3 tsp of oil if it feels dry.



Fried idlis are ready to be served. They look really colourful and are very healthy too. You can have them for breakfast or as snacks and also its a quick dish for those uninvited sudden guests too. Lol.

FRIED IDLI WITH VEGETABLES


INGREDIENTS

Idli                                                      7-8
Capsicum                                          1
Onion                                                 1
Tomato                                              1
Mustard Seeds                                1 tsp
Turmeric Powder(Haldi)              1/4 tsp
Red Chilly Powder                         1/2 tsp (or as spicy as you prefer)
Salt                                                     to taste
Tomato Ketchup                             1 tbsp (or more if you like)
Cooking Oil                                      7-8 tsp

METHOD

1) Chop the onions, capsicum and tomato.
2) In a skillet, put 5 tsp cooking oil and add the Mustard seeds (sarso) when its hot.
3) Put the onions and add salt to taste. Cook till they become golden brown.
4) Add the capsicum and cook until it becomes soft.
5) Now add the tomato, turmeric(haldi) and red chilly powder. Cook for 2 minutes.
6) Now add the tomato ketchup.
7) Finally cut the idlis and add them to this mixture.
