Eggless Fresh Strawberry Shortcake

I just cant get enough of fruits. I have always loved fruits because they are tasty and healthy at the same time. I dont have to think twice about gaining kilos before eating them.
Especially in summer they help you keep hydrated and are a source of essential vitamins to the body keeping you active the entire day. Recently I have been looking at healhty vegetarian options of baking and making desserts.

And so I tried the Fresh Strawberry Shortcake. I love the fact that fruits make your dessert look so colorful and lively and that too in no time and frankly speaking much less effort than any other cake decorating options.
This strawberry cake has been so easy and quick to bake and decorate and it looks lovely to present in a  family get together when the cake is to be shared with people of varied age groups. (Oldies at my place have a tendency to become chocolate averse).

With so many options of fruits in the market you can have lots of fun trying new flavours at home. I am going to bring lots of fruit based dished to table this year to go in hand with my health first resolution.

P.S: Its my Birthday month. And I'm still wondering which cake to bake that day. Any suggestions?

FRESH STRAWBERRY SHORTCAKE


INGREDIENTS

For Cake

Flour
1 cup
Sugar
¾ cup
Yogurt
1 cup
Baking Soda
½ tsp
Baking Powder
1 ¼ tsp
Oil
½ cup
Vanilla Essence
1 tsp

For Decoration

Strawberries (small- medium sized, cut in halves)
1 box
Strawberry syrup (homemade / store bought)
1 tsp
Whipped cream
1 cup

METHOD

For Cake

  1. Preheat the oven at 180 C. Prepare a 6 inch cake pan with oil and flour spread. (You can also line it with butter paper)
  2. Sieve and mix together the dry ingredients in a bowl- flour and sugar.
  3. Take the yougurt in another bowl and add baking soda and baking powder. leave it for a minute to rise.
  4. Now add this yogurt and oil slowly in 3 parts to the dry ingredients and fold. Do not overfold as it will lose all its air.
  5. Add vanilla essence and make sure the batter is smooth.
  6. Pour the batter into the prepared cake pan and bake at 180 for 30min. Check after 25 min as oven tempratures could differ.

For Decoration
  1. After the cake cools completely, slice it into two halves.
  2. Apply a generous layer of whipped cream in the middle of two layers.
  3. Now layer it with halved strawberries and pour strawberry sauce.
  4. Put the top layer on this wihtout pressing much and repeat the cream and strawberry layering process again.
