Watermelon Jello Cake

Summers are here for a good long time in Delhi. And I made another really amazing fruit flavoured cake. And this time guess what, it's got Jello too. If you have been following recipes here, you would know I really do love Jelly. And that I love to experiment with food. And also that I'm making all things fruity this season. So, all of them together and we have our Watermelon Jello Cake.

A lot of you would wonder, seriously, watermelon, jello and cake. Those things don't even sound good together. But trust me they taste amazing. It has been one of the really successful experiments at my home. It has few ingredients, no need to bake or cook and no long tedious hours of decoration. Its simple to make, and so light and yummy to eat. Also, its much healthier than the normal cakes we have. It has a crust made of Marie Biscuits (Digestive Biscuit), and has no extra sugar added.

WATERMELON JELLO CAKE

INGREDIENTS

Marie/ Digestive biscuits
15-20
White butter
3 tbsp
Jello (plain or any flavour you like)
1 packet
Whipped cream
1 cup
Watermelon(chopped and drained of water)
2 cups
Mint (for garnish)
8-10 leaves

METHOD

  1. Crush the biscuits in a food processer and add butter to it. Now take a detachable tin and flatten this mixture into it to form a base. Refrigerate it for 15 min.
  2. Chop the watermelons and drain of all excess water.( If you don't drain the water the cake will have excess liquid and may not set properly)
  3. Prepare the Jello as per the instructions on the packet. Since watermelon flavour wasn't available I used strawberry and it tasted really good.
  4. Now once all the ingredients of jello packet is mixed together, add the whipped cream and mix well to avoid an lumps.
  5. Now add the chopped and drained watermelons to this mixture.
  6. Pour it into the tin with base formed already in step 1.
  7. Chill in refrigerator for atleast 4-5 hours for the jello to set properly.
  8. Garnish with more chipped watermelons and mint and nuts for added flavours.
Serve the Jello cake chilled. I'm sure it would be one of the easiest no bake and amazing cake you have had.
