Mango Rose Cake- Summer Fruit Cake

There we go! Mangoes. The ultimate summer fruit. Abundant here in India with countless varieties you cant stop eating them once you start. And every season they ought to have a special mention- The King of fruits.

I had been wanting to do a mango recipe the entire season, which is easy and equally yummy for all of you to try. I did an Eggless Mango Mousse Tart a few seasons back and Eggless Mini Fresh Mango Tarts as well, you can find the recipe here and here respectively.

For those of you who love soft, moist eggless cakes, which have mangoes in and out and looks so pretty you don't want to cut it even, read on to find the simple recipe below.


MANGO ROSE CAKE

INGREDIENTS

Wheat flour
1 cup
Powdered Sugar
¾ cup
Baking Powder
1 ¼ tsp
Baking Soda
½ tsp
Yogurt (thick)
1 cup
Mango pulp
1 cup
Cooking Oil
½ cup
Vanilla Essence
1 tsp
Sliced Mangoes (for garnishing)
2 big

METHOD

  1. Take the dry ingredients- flour (sifted), powdered sugar and mix together.
  2. Now take the yogurt and add baking powder and soda. Leave it for a minute and let it rise.
  3. Mash the mangoes in a bowl. 
  4. Now add the flour, yogurt and oil to the mashed mangoes slowly in 3 parts. Fold well. Don't overfold as it will lose its incorporated air.
  5. Now add vanilla essence.
  6. Preheat the oven at 180 C.
  7. Grease a 6 inch round cake tin with oil and dust with flour. Pour the batter into the greased cake tin.
  8. Bake for 30-35 min at 180C. Check after 30 min and then keep more accordingly as the oven temperatures differ for each oven.
For the Mango Decoration
  1. Cut 2 hard yet ripe mangoes in neat halves.
  2. Now cut thin slices of these halves.
  3. Starting from the outside of the cake, start placing the slices in concentric circles.
  4. You will reach the centre slowly, make use of the smaller pieces.
  5. Round the last middle slice to look like the middle of a rose.

Its as easy as that- baking an eggless cake and placing sliced mangoes. Your next party show stopper is ready.
