I love Ice Cream Sandwiches because its like a package of goodies. You get to have cookies and ice cream topped off with chocolate and sprinklers and your life suddenly looks like a rainbow! And if I say, you can make those cookies a little healthier, would you believe? You stick on with this post and I'll make you believe it.

I made these super amazing thick and crispy Peanut Butter Cookies with the unsweetened Peanut Butter sent in by the very lovely folks at Yogis Organic. The cookie sandwiches have an outer layer of thick yet crispy peanut butter cookies and cover a dollop of vanilla ice cream (or any of your favourite), dipped in chocolate and nuts from a side.
From kids to adults, this is loved equally. So your next fall dinner dessert is ready.



PEANUT BUTTER COOKIE ICE CREAM SANDWICH (EGGLESS)

INGREDIENTS


All Purpose Flour
¾ cup
Whole Wheat Flour
¾ cup
Baking Powder
1 tsp
Baking Soda
½ tsp
Salt
¼ tsp
Unsalted Butter (room temp)
½ cup
Honey
¾ cup
Peanut Butter
½ cup
Milk
1/3 cup

METHOD

  1. Mix all the dry ingredients.- flour, baking powder, baking soda and salt.
  2. Now add butter and peanut butter to this and mix.
  3. Add honey and mix.
  4. Now slowly add milk and knead to make a soft dough.
  5. Keep it for 30 min.
  6. Now divide it into equal circles of 1-1.5 inch diameter.
  7. Flatten it with your hand and keep on a baking tray.
  8. Preheat oven at 180C. Bake for 10-12 min till the sides become brownish.
  9. Let the cookies cool. Take a scoop of ice cream and place on one cookie and cover with another.
  10. Dip half of this into melted chocolate and garnish with nuts.
  11. Freeze for 2-3 hours. Peanut Butter Cookie Ice Cream Sandwiches are ready to be served.
