Fresh Fruit Bundt Cake | Eggless | Whole Wheat

'Tis the season of strawberries, kiwis, oranges, grapes and so many more beautifully tangy, citrus flavours. What I absolutely love about winters is how the markets are flooded with winter season fruits and the colours they bring to the palate. And to me, taste, freshness, organic and colours, all of this together is a scenario of happiness overdrive.

I have been making a lot of seasonal fruit desserts on the blog for a year now covering the best of summer fruits- Litchi, Mango, Pineapples to Pumpkins in the fall and now in winters to Tangerines, Strawberries, Kiwis and Mixed Fruit Desserts. And this winters, here goes a super simple, eggless, made with whole wheat flour (since we are going the healthy-ish route and for most recipes ditched the all purpose white flour/maida) filled with strawberries and topped with lightly sweet whipped cream and a generous helping of freshly cut strawberries, kiwis and mint. The wreath like look of the cake is sure going to be a showstopper at your next party and it doesn't need an expert culinary skill to be baked. The fresh colours over the bundt itself is a crowd puller.

Whole Wheat Flour
3/4 cup
Chopped Strawberries
1/2 cup
Cinnamon Powder
1 tsp
Baking Soda
3/4 tsp
Baking Powder
1 tsp
Yogurt
3/4 cup
Oil
1/3 cup
Vanilla Essence
Sugar
1 tsp
1/2 cup

METHOD

  1. In a bowl, mix together Whole Wheat Flour, Sugar and cinnamon powder.
  2. In another bowl take the yogurt and mix with it baking soda and baking powder. Let it rise for 2 min.
  3. Now combine the flour mix, yogurt, oil and strawberries together to form the batter.
  4. Pour the batter in a greased cake tin/bundt tin of 6in.
  5. Preheat the oven at 180C and bake for 25-30 min until cooked and golden brown in colour.
  6. Once the cake cools down, ice some plain whipped cream on top.
  7. Cut strawberries, kiwis and some mint. Top it over the cream to make it look like a wreath.
  8. Drizzle some honey/maple syrup on top.
