Mother's Day Treat- Banana Oatmeal Cookies

Wasn't he absolutely right? Everything we learn in life, from our first steps, our first words to all the success that we achieve is because of the unconditional love and support given by our parents. And mom is the only person whom we end up running to when in problem. Its a shoulder which is always there for us to lean on.

But there is another aspect of this, rightly identified by another very famous personality.

And I followed his advice on this Mother's Day. I not only did the dishes(being a good girl) but made a little treat for my complete family. Though it was supposed to be a brunch (traditionally) but it ended up being evening snacks (thanks to my exam being just the next day. And that's why this post is a tad bit late too.)

Nothing very fancy (again blame exam), but a simple combination of my tried and tested recipes and something new and definitely healthy. So this was the little meal I prepared (meal because we were full after this)
- Banana Oatmeal Cookies
- Assorted bread pizzas and toasts
- Chilled Virgin Mojito
A complete range of healthy and tasty refreshments which was liked by my entire family (so I term it as a  success..yay).

And here I have the recipe for the banana oatmeal cookies. Trust me its quite simple. And don't go by the name, its taste plus health (I go only for the taste though. lol ) Many of you wouldn't be oat lovers but this is a nice combination where the taste of banana and my secret little ingredient (wait for it) supersedes the oat flavour. And I adapted the original recipe from the website Julias Album.

I'll be short and quick this time. ( Exam days you see)
Take a large bowl and combine the dry ingredients as usual- flour, baking powder, baking soda, cinnamon and salt. (measurements are given below)
In another bowl mix wet ingredients-mashed bananas, egg, oil, yogurt and vanilla essence.
Now slowly add the dry to wet and mix by folding.
Add in the oats and the secret ingredient- a spoon of chocolate sauce.
Now preheat your oven at 180°C. Prepare a baking tray by keeping a parchment paper/butter paper and putting cookie dough balls on it with a spacing of about 2 inches.
NOTE: Since the temperatures are soaring high at 42°C I had to refrigerate the dough a bit so that they do not flatten out while baking.
Bake this for about 12-14 min till they get a nice light brown shade. Be cautious while pulling them out of the oven, the tray will be really hot. Yummy, chewy and soft cookies done. They wont turn out hard and brittle because I generally like cookies to have a soft and chewy texture.
Store in a air tight container to retain the freshness.

Banana Oatmeal Cookies


INGREDIENTS

Dry Ingredients
Flour                                                     1.5 cup
Powdered brown sugar                           3/4 cup
Granulated sugar (white)                         1/4 cup
Baking powder                                       1 tsp
Baking soda                                           1 tsp
Cinnamon                                              1/2 tsp
Salt                                                       1/2 tsp

Wet Ingredients
Banana                                                    1 big and ripe
Egg                                                         1
Cooking oil                                              2 tbsp
Plain yogurt                                             1/4 cup
Vanilla Essnce                                         1 tsp

Other Ingredients
Oats                                                        1 and 3/4 cup
Chocolate Sauce                                      1 tbsp
Chocolate Chips(optional)                          1 cup

METHOD

1) Mix the above mentioned dry ingredients in a large bowl. Remember to sift the flour and then measure or you will end up using more than wanted.
2) In another bowl mash the bananas and mix the other wet ingredients.
3) Add the dry mix to the wet slowly and combine them by folding well.
4) Add the oats and chocolate sauce and choco chips(optional).
5)Line a baking tray with parchment paper(butter paper) and pour this cookie dough ball onto it with a 2 inch space. Refrigerate it for an hour.
6) Preheat the oven at 180°C. Bake the dough for 12-14 minutes until you get a light brown shade.
7) Do the fork test. If baked, remove from the oven and let it cool.

Cookies ready. Taste- check. Health- check. Mom-Happy-Check.
