Scrambled Eggs


Me: (hungry and  dancing) Breakfast..breakfast..breakfast..what to have..la la la (dilemma part 1)
Mom: (duh) Why dont you cook eggs? (part 1 solved)
Me: (huh) In this heated summer?
Mom: (duh) Yes!
Me: (whaaat) Me? again? cooking?
Mom: (duh) Yes! I got to go.
Me:  Oh No. (lost expressions now)

What? Confused? Don't be..its just a normal routine conversation..featuring me and my mom. Being a working mom she really gets very little time to experiment in the kitchen. So that department has just shifted to me. But lazy as I am I would prefer someone else making the dish in the morning..(hehe)


Ok so..opened the fridge..got two eggs..what should I make (dilemma part 2). Omelette? Na very common. Bhurji? Na last time I had it. French toast? Na..too much labour. End of options (according to my brain). Open google..find something new..too many options..still confused. ughh!
Lets try scrambled eggs..heard a lot about it and sounds easy too..(dilemma part 2 solved)

And this was the short version of my hour long story of me ending up making THE SCRAMBLED EGGS. Trust me they are very easy and quick. I had seen and heard about them but never tried. And now that I have..(successfully 5 times..yayy) I have become a fan of them.

For those who haven't heard anything about it..Scrambled eggs are a form of that regular egg bhurji you have at your home minus the onions or any vegetable plus the malai. In simple words..it has only four ingredients..egg, cream/milk, butter (very little) and salt. That's it.

How is it made? Very simple.
Crack the eggs. (2 in my case) Beat them. Add 1 tbsp cream or milk.
Bring out the pan in which you make omelettes. Put some butter on it.
Now put the egg and cream mixture. Let one side cook a bit, not completely. Now start folding this semi omelette again again so that the liquid flows over the cooked part..and slowly you will get scrambles(bhurji). This means you will find the cooked eggs in pieces.


Don't over cook. You don't want to lose the nice golden colour. But if you like it crisp you can brown them a bit.
Put some salt to taste mix it it well. If you want you can put a little black pepper or red chilly powder on it.(because for people like me no dish is complete without the touch of spice..)

Scrambled eggs done. They are soft, creamy and appetizing. Plus eggs are very healthy too. And don't budge feeling its summer. Sunday ho ya Monday roz khao ande! Also I tried it with onions this time. It was just an experimental variation. You can try it too. It turned out tasty. ☺


So here is a mini version of the scrambled eggs story above. Its a must try recipe for all the egg lovers out there.

       INGREDIENTS

Fresh Eggs                                                    2(or more as per you appetite)
Cream/ Full cream milk                            1.5 tbsp
Salt                                                                  to taste( a pinch)
Butter                                                             1 tsp
Black pepper/ red chilly powder            1/4 tsp (optional)

       METHOD

1) Beat eggs and cream in a bowl.
2) Put the butter on the pan.
3) Pour the egg mix onto the pan. Let one side half cook.
4) Start folding the  half cooked omelette again and again so that the uncooked liquid starts cooking.
5) Keep on folding until you get scrambles(bhurji).
6) Add some salt to taste and pepper if you want and mix well.
7) Serve hot. Can be had with sauce.
