Back to Bombay- Vada Pav

I have always loved Vada Pav!! That's the start and end of it. And seriously who doesn't? It's soft, spicy, tangy, filling and healthy..all of this at the same time. What more can you ask for in a snack!


Recently I went to Mumbai (a break from the year long rat race), and it goes without saying that I had Vada Pav. It was amazing. The original "Bombay street food". And I couldn't get enough of it. I knew I'm going to come back and make them myself. And that's how this blog post comes to life.

An easy homemade VADA PAV recipe. A DIY to one of the most famous Indian Street Food. The same flavors and taste all at home. You can also make this super yummy yet healthy Indian snack and I'm sure you won't stop at one. Keep the flavors spicy, tangy, raw and garlicy as per your liking and you have one of the best Indian snack ever.

P.S: I also tried Missal Pav, and I loved that too. Will try it soon and put up the recipe.







The recipe for Vada Pav is given below. The Vada (also called Aloo Bonda) recipe is something we have been making at home for ages. The pav I used is ready made (though I'm gonna definitely try to make it at home). You can buy the Dry Garlic Chutney but I made this one at home, Will post the recipe for it soon.

VADA PAV RECIPE

INGREDIENTS

For the Filling- Aloo Bonda

Boiled Potatoes(Mashed)                   6 medium sized              
Onion(chopped)                                  2 medium sized
Cooking Oil                                         6-7 tsp
Cumin Seeds(Jeera)                            1 tsp
Turmeric(Haldi)                                 1/2 tsp
Coriander powder(dhania powder)   1/2 tsp
Green Chilly(chopped)                       4-5(more if you prefer spicy)
Ginger(Grated)                                   1/2 tsp
Garlic(chopped)                                  1/2 tsp
Salt                                                      to taste
Curry leaves                                        10-12 leaves(more or less as per your preference)

For the Covering- Aloo Bonda

Besan                                                  2/3 cup
Rice Flour                                           2 tbsp
Salt                                                      a pinch
Water                                                  as needed to keep a dripping consistency
Red chilly powder                              1/4 tsp
Turmeric(haldi)                                 a pinch
Oil                                                       for frying

Dry Garlic Chutney                            as per taste and spice levels preferred
Pav                                                      8-10

METHOD

For Filling
1) Boil the potatoes and mash them in a bowl.
2) In a kadhai(deep pan) put oil, cumin seeds, onion, ginger, garlic and cook till golden brown.
3) Add the masalas and green chilly to it and cook for 2 min.
4) Add the boiled potatoes and cook for another 5 min.
5) The Aloo Bonda filling is ready. Keep it aside to cool.
6) Make medium round balls of it.

For Cover
1) Mix all the ingredients for the besan cover together.
    Avoid formation of lumps in this batter. Keep a dripping consistency.
2) Heat oil in a frying pan.
3) Dip each ball of potato in the besan cover and fry it till a nice yellowy golden colour.

For making Vada Pav
1) Take a pav . Cut it in half. Heat it by apply some butter inside.
2) Apply some dry garlic chutney over it. You can also cut the bonda and apply chutney inside it,
3) Keep it between the cut pav.
4) Serve it with dhania pudina chutney and green chilly.
