Egg and Vegetable Sandwich- Better Breakfast Month

" I'll eat some breakfast, and then change the world."
Said someone who knew his priorities.

Since childhood we have been taught to "Eat breakfast like a king", and if you follow it to heart, believe me that is one of the most useful lessons learnt in your life.

I have never ever followed it. And seriously I couldn't have been doing anything worse to my health by missing the most important meal of the day. Just by following this one habit of regularly having breakfast has brought about a tremendous change in my entire lifestyle.

September being the "Better  Breakfast Month", why not celebrate it with a lovely Egg and Vegetable Sandwich which is equally healthy and easy to make. It has the goodness of vegetables, proteins and necessary fat from egg and keeps your stomach nice and full till lunch. For people like us working and running in the morning to office, its one of the best bets to a healthy day.







Below is the recipe to this yummy and healthy start to your day. Hoping you love it as much as my family and colleagues at office did.😉

EGG & VEGETABLES SANDWICH

INGREDIENTS

Wheat Brown Bread                                                 12
Eggs                                                                            6
Spinach                                                                     1/2 cup
Onion                                                                        1/2 cup
Coriander Leaves                                                      1/4 cup 
Red Capsicum/Bell Pepper                                       1 medium
Tomato                                                                      2 big
Lettuce                                                                       6 big leaves
Pizza Sauce/ Regular Sauce                                      6 tsp
Amul Lite Butter                                                       3 tbsp
Black Pepper Powder                                                sprinkle as per taste
Red Chilli Powder                                                     1 tsp
Salt                                                                            sprinkle as per taste
Cooking Oil                                                               2 tsp

Serves: Makes 6 sandwiches

METHOD

  1. Beat 3 eggs at a time. Add salt, red chilli powder(1/2 tsp), spinach, onion and coriander leaves to it. Using 1 tsp oil make the omlette. Repeat the same to make another omlette. Cut each into 3 parts.
  2. Apply butter on the bread and grill/ toast them. (Grilled bread has much more flavours than plain sandwich bread)
  3. Apply 1/2 tsp of pizza sauce on each slice.
  4. Take one slice of bread and place 1 cut piece of egg omlette onto it. Now place some sliced tomato and capsicum(bell pepper) and sprinkle black pepper powder over it. Place one lettuce leave and cover it with another slice of bread.
  5. Repeat for all bread slices and your healthy and super yummy breakfast is ready.
