Badam Thandai- Healthy & Quick Spiced Sweet Milk
Holi- The festival of colours. As the name says, it does brings along lots of colours, happiness and joy into our lives. And why not when you have so much yummy food to eat. In India any festival is equivalent to lavish course of homemade delicacies.
Ever since my childhood, Holi has been one of my favourite festivals because of all the colours involved and the "Holi ke Pakwan", traditional Holi food- Gujia (Sweet coconut, suji & khoya wrapped in a flour covering), Pudina Aloo (Boiled potatoes in Mint Chutney), Thandai (sweet milk and almond beverage) and Dahi Vada (Lentil Cutlets dipped in yogurt).
So this time I decided to try and make Thandai by myself. For me Indian dishes tend to become a little more difficult than baking cakes, its not easy to achieve the actual combo of flavours, colours and texture at the same time. But this Thandai did not let me down.
Its a pretty simple and quick recipe and the flavours are lovely. And the best part, its a very healthy way to start your festivities( because rest of the day is going to be super dirty). And you can make it any other day as it is very filling. The combination of milk and nuts is filled with proteins, essential fats and keeps you full for a long time.

Badam Thandai
INGREDIENTS
Warm Water

1 cup

Almonds (ground)
|
3 tbsp

Pistachio (ground)
|
2 tbsp
|
Melon Seeds (optional)
|
¼ cup
|
Poppy Seeds
|
2 tbsp
|
Rose Petals/ Rose water
|
2 tbsp
|
Fennel (Saunf)
|
1 tbsp
|
Black Pepper
|
½ tsp
|
Green Cardamom
|
3-4
|
Saffron (strands)
|
pinch
|
Milk
|
1 litre
|
Sugar
|
10-12 tsp(as per taste)
|
METHOD
- Soak the Almonds, Cashews, Melon Seeds & Poppy Seeds in warm water and then grind into a paste.
- Add saunf, black pepper, green cardamom to this paste and grind again.
- Now boil the milk in a deep saucepan.
- Add the nuts and spices paste made above, sugar, saffrona nd rose water to it and cook for 2-3 minutes. No need to thicken it.
- Chill for an hour and serve with a garnish of sliced almonds and rose petals.
