Pomegranate Stwrawberry Jello Tarts (Eggless)

Summer is always nice and long in Delhi. (not exactly nice but really hot and dry) And in these days fruits are our best friend. If you have been following my previous posts(eggless banana cake, strawberry shortcake, fresh fruits cake) you would know I'm experimenting with fruit based desserts these days, trying to make desserts healthy and eggless (yayy).

In in the same spirit I made these Mini Pomegranate Strawberry Jello Tarts. They are completely vegan, without eggs, the tart crust made with whole wheat flour(atta) which is a much healthier option than the all purpose flour (maida) that is generally used for baking. Also, they are pretty simple to make and look so pretty, my family was kind of scared to ruin them by eating.

Below is the recipe for these tarts. You can try them with flavours that you like, raspberry, watermelons, orange etc. Let me know in comments what's your favourite fruit flavour.


POMEGRANATE STRAWBERRY JELLO TARTS

INGREDIENTS

For the Crust

Flour
1 cup
Powdered Sugar
1/3 cup
Salt
1/8 tsp
Unsalted butter
½ cup

For the Jello Filling & Serving

Strawberry Jello mix
1 packet
Pomegranate
1 small
Chopped nuts(cashew, almonds)

Whipped cream
½ cup

METHOD

For the Crust
  1. Mix flour, powdered sugar, salt and unsalted butter (at room temperature).
  2. Knead them well to make a dough.
  3. Keep the dough to chill for 1/2 hour(covered with a cloth).
  4. Now make small rounds of these dough and flatten by a rolling pin.
  5. Prepare tart pans by greasing with oil. Keep these flattened crust in pans. poke some holes with a fork in the middle so that they don't rise.
  6. Pre heat oven at 180C. Bake for 15 minutes or more until the crust looks golden and crispy.
For the Jello Filling

  1. Buy a packet of strawberry jello and follow directions on the pack to make it.
  2. Before setting add some pomegranate to it.
  3. Pour them in the tart pans and allow to set in refrigerator for 5-6 hours.
  4. Before serving finish off with some whipped cream on top and fresh pomegranate. Youc an also add chopped nuts.
The Jello tarts are ready to be served. They are a show stealer because they are small and look lovely. Do try and let me know your experience.
