Vegan Pasta Salad

He said the right things. Salad is not just about eating healthy. Its a lifestyle choice. Its to bring that colourful happiness in your life. 
By going healthy I never believe in going on diets. (You would know by the amount of dessert posts I do) But moving towards healthier options everyday, replacing ingredients that could make my body feel as good as my tongue and tummy.

And moving that way I made this yummy in my tummy Vegan Pasta Salad. Wait what? Pasta and salad together? Its like those words are meant to be on extreme ends to each other. But no! They can be brought together in so many fun ways that you will surprised that healthy can be so tasty too.

This pasta salad is super quick to put together for breakfast and I have become a fan of it since I tried it few days back. You can add as many veggies as you like, raw or boiled, and make it more fun and flavourful. All I added is red and yellow bell peppers, onion, tomato, cucumber, olives, boiled semolina pasta and my favourite herbs.

VEGAN PASTA SALAD

INGREDIENTS

For the Pasta

Semolina/ Suji Pasta
1 cup
Salt
Pinch (for boiling)
Bell Peppers (red & yellow)
1 each small
Cucumber
2 small/ 1 big
Onion
1 medium
Tomato
1 medium (chose the hard one)
Olives (pitted and sliced)
¼ cup (more if you like)

For the Dressing

Olive oil
¼ cup
Basil (fresh preferred, dry also works)
5 tsp
Parsley (fresh preferred, dry also works)
5 tsp
Oregano
5 tsp
Salt
1 tsp/ to taste
Black Pepper Powder
2 tsp
Sugar Free Powder
1 tsp
Chaat Masala Powder
1 tsp

METHOD

  1. Boil the pasta al dente in water and adding a pinch of salt and tsp of cooking oil. This makes sure that the pasta doesn't stick to each other.
  2. Now chop all the vegetables and keep aside.
  3. Mix all the ingredients of the salad dressing in a bowl.
  4. Add the vegetable and mix well.
  5. Now add the pasta and mix so that the dressing is evenly spread.
  6. Serve the pasta salad in a bowl.
Rushing for office in the morning? Prepare overnight.

  1. Chop all the vegetables and secure them in a zip lock without air being trapped inside and refrigerate.
  2. Prepare the salad dressing and store it inside an air tight container away from any light.
  3. Boil the pasta in the morning, which takes only 5 min or so on a gas top.
  4. Mix all the prepared items and pack it off for your office breakfast.
