Eggless Coffee Banana Bread
We are huge banana bread fans since forever! I have been saying this for long now, that me and my family are banana bread lovers and this has been my first recipe ever that I baked successfully.
Since we all love to have it as a tea time snack or even breakfast sometimes (seriously), I have been experimenting with various flavours and even healthier ingredients. From white all purpose flour to whole wheat flour now and sugar to sugar free/ honey, there have been small yet important tweaks I made to the recipe time and again.

EGGLESS COFFEE BANANA BREAD
INGREDIENTS
Bananas (ripe and mashed)

Powdered Sugar
Alternative: Honey (reduce Yogurt by 1/4 cup) |

Baking Powder

1 ¼ tsp

Baking Soda
|
½ tsp

Yogurt
|
1 cup

Cooking Oil
|
½ cup

Vanilla Essence
|
1 tsp
|
Instant Coffee Powder
|
3 tsp
|
Water (to dissolve coffee)
|
3-4 tsp
|
METHOD
- Take the dry ingredients- flour (sifted), powdered sugar, salt, and mix together.
- Now take the yogurt and add baking powder and soda. Leave it for a minute and let it rise.
- Mash the bananas in a bowl.
- Mix instant coffee powder and water. Add this to bananas.
- Now add the flour, yogurt and oil to the banana coffee mix slowly in 3 parts. Fold well. Don't overfold as it will lose its incorporated air.
- Now add vanilla essence.
- Preheat the oven at 180 C.
- Grease a 6 inch round cake tin with oil and dust with flour. Pour the batter into the greased cake tin.
- Bake for 30-35 min at 180C. Check after 30 min and then keep more accordingly as the oven temperatures differ for each oven.
