Gavvalu | Gudpaara| Sweet Shell Snack| Shakarpara

Gavvalu or Gudpara as its known in Hindi are Sweet shell shaped snack made with wheat flour and jaggery. They are made in the form of small sea shells and coated with a mildly sweet layer of liquid jaggery. And they are super addictive! You just cant stop at one, or two, or ever!

My grandmother used to make gudparas since my childhood and it was loved by all of us at home. You can just keep munching around the house with them the entire day. This just makes me remember all the yummy things that she has always been baking and cooking for the entire family.

Its a very easy sweet snack to make, can be had at any time of the day, doesn't need any special expertise (apart from lots of love). Its completely vegetarian and since festival season is coming up in India, you can serve them to all your guest with some nice hot chai!

INGREDIENTS

Whole wheat flour
1 cup
Salt
A pinch
Ghee/ Oil
2 tbsp
Water
Start with ¼ cup and add as needed.
Oil
For frying
Jaggery
¼ cup (small pieces/ grated)
Water
1/8 cup (use more if needed)

METHOD

  1. In a bowl mix together, whole wheat flour, salt, Ghee/Oil.
  2. Knead them into a dough by adding water as much as necessary.
  3. Make small balls of this dough. Take one ball and flatten it in the palm of your hand. Now with a fork press the upper side of the flattened ball to form lines. Now roll this flat dough into a shell shape. Repeat this with the entire dough.
  4. Heat oil/ghee in a deep kadhai/cook pot and fry them. Put 4-5 or more as per the size of your kadhai and don't let them stick to each other.
  5. Let them cool.
  6. Till then take a saucepan and put jaggery and little water. Heat it to liquify the jaggery.
  7. Now coat the shells made with this liquid.
  8. Let it cool again.
