Cookie & Cream Parfait | No Bake Parfait | Dessert Jar

Its Parfait Day and who doesn't love some good layers of your favourite flavoured chocolate, fruits, cream and nuts. Its one of the most versatile desserts as you can make any variation you like and there is a flavour for everyone.

COOKIE & CREAM is amongst the top favourite flavours of so many of you, that I decided to bring a super simple, eggless recipe that you can whip up in no time. This Cookie & Cream Parfait has a layer of crushed Honey Oatmeal Cookies, then vanilla whipped cream and chocolate mousse topped with some dry roasted salted almonds and oat flakes.

COOKIE & CREAM PARFAIT | NO BAKE DESSERT | DESSERT IN JAR

INGREDIENTS


Cookies (of your choice)
8- 10
Almonds (sliced)
1/4 cup
Oat flakes
1/8 cup
Melted chocolate (dark/milk as per your choice)
2/3 cup
Whipped Cream
½ cup + ½ cup
Sea Salt
¼ tsp
Cocoa Powder
1 tsp
Instant Coffee Powder
¼ tsp

METHOD

  1. Cookie: Crush the honey oatmeal cookies to make a semi powder form.
  2. Chocolate Mousse:Melt the chocolate adding 1 tsp of coconut oil in the microwave for 30 seconds first, mix it and then again in micro for 30 seconds. Mix this chocolate in 1/2 cup whipped cream and add 1 tsp of cocoa powder and coffee powder.
  3. Topping: In a small pan take sliced almonds, salt and maple syrup and dry roast it. Keep it aside.
    In the same pan dry roast oat flakes with salt until they are light brown in colour.
  4. Layering:Start by making a base layer of crushed cookies.
    Now layer with vanilla whipped cream (white).
    Pour some more crushed cookies.
    Now layer with the chocolate mousse.
    Now add the roasted almonds and oat flakes for garnishing.
Serve chilled!
