Eggless Rice Flour Carrot Walnut Cake | Vegan | Gluten Free

I have been talking about New Year Resolutions this 2019 everywhere on social media. And why not, if you make resolutions and share them, you become slightly more committed to them. If not for the entire year, but following it as long as possible gives you new goals. And that's the important part. No goals, no action taken.

And one of my resolution is to eat healthy, and bring the best of healthy and super tasty recipes to you. And so I proudly present to you (I mean yes, I am proud because this experiment turned out amazing and I'm so happy about it!) the EGGLESS RICE FLOUR CARROT WALNUT CAKE which is completely Gluten Free, Eggfre and Dairy Free. So all you healthy eaters, dairy allergic and vegan people, this one is for you. And this is in collaboration with my favourite Yogis Organic whose pure and super freshly ground Brown Rice Flour I used. The texture of the cake was so beautiful, moist and totally melt in the mouth. Using organic ingredients is not just good for health but it gives out such great baking results and makes guilt free binge eating real! So without much ado, find below the recipe which is super simple and healthy for you to have. Hope you make winters more tasty with this Carrot Cake.

EGGLESS RICE FLOUR CARROT CAKE |
VEGAN | GLUTEN FREE

INGREDIENTS

Brown Rice Flour
Sugar (Powdered)
2 cup
1 3/4 cup
Grated Carrots (Red)
1 cup
Cinnamon Powder
1 tsp
Baking Soda
1 tsp
Baking Powder
2 1/2 tsp
Yogurt
1 cup
Oil
½ cup
Walnuts (Chopped)
¾ cup
Vanilla Essence
1 tsp

METHOD

  1. In a bowl, mix together Flour, Sugar and cinnamon powder.
  2. In another bowl take the yogurt and mix with it baking soda and baking powder. Let it rise for 2 min.
  3. Now combine the flour mix, yogurt, oil and carrots together to form the batter.
  4. Pour the batter in a greased cake tin/ casserole of 8 in. (you can halve the recipe for a smaller cake of 6 in)
  5. Preheat the oven at 180C and bake for 35-40 min until cooked and golden brown in colour.
Icing the cake
  1. Just use a dollop of whipped cream mixed with little cinnamon powder for the basic icing on top.
  2. Sprinkle some grated carrots and chopped walnuts on top.
Rice Flour Carrot cake is ready to be served warm.
